What To Do With Leftover Turkey

December 13, 2012 - Author: Amy - 25 Comments

If you still have turkey leftover from Thanksgiving in your fridge… Probably shouldn’t eat it.

But!  If you have leftover turkey in your freezer, or plan to have a turkey at Christmas, D made a delicious dish that was a welcome change from leftover turkey sanniches.

(Poorly adapted from here)

Spicy Turkey Soup, y’all.

  • 8 cups chicken broth
  • 4ish cups turkey (shredded)
  • 1 can chopped tomatoes
  • 1 can hominy
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 1/2 cups water
  • 2 anaheim chiles
  • 2 ancho chiles
  • salt to taste

Whatever you want on top – we just went with cilantro and lime juice.

D also made tortilla strips by cutting up corn tortillas, drizzling them in olive oil, bake, then toss in salt and garlic salt.

The lump of greenish stuff is sour cream mixed with salsa verde.  And it was fantastic.

We ate it and then this happened.

So do I and this one was a winner!!

  4. Now I’m (really) hungry. AND the pup/baby are just way too much cuteness.

  5. Thank gosh I just ate my lunch, or my stomach would be growling right now!!

PS-Gosh those two is right! They are so cute they could have their own blog…maybe called “no one is cuter”. :)

  6. That sounds so good! And Junior and Bill are too cute for words! They’re both getting so big!

  7. Sounds terrific. I make a turkey soup every year with leftovers, but never made a Southwestern version. Maybe this year?

  8. We make a quick & easy turkey cassoulet. Cassoulet is typically a several hour cooking adventure, but if you use canned beans and skip all the crazy Martha Stewart steps you can make it in about an hour in a dutch oven. I guess at that point maybe it’s just turkey, ham, & beans. :-)

  9. Oh, and we also make turkey chiliaquiles (sp?) for breakfast. So, so good.

  10. Yum! Love me some soup!

Your boys are totally adorable! I love that they are so good together- you really found a keeper in Bill!!

Looks yummy. My hub makes sure there is never too much turkey left over. Or not for very long anyway! Cuteness overload with the babies!

  12. That looks delicious! We didn’t have much leftover turkey this year, but we do have one in the freezer (because Kevin can’t help buying ANYTHING on clearance, even turkeys).

  13. Oh my… I was totally into that recipe and all your super yummy toppings and then those pictures. it made my heart melt and I forgot all about the soup.

  20. Those two need to be in some kind of commercial together, like for toilet paper or life insurance or something. They are both so squeezable!

  21. Awe. Those two are so sweet! Can that happen at my house with my crazy dog and little baby if we make this soup?

  22. There are lots of heartwarming stories I can recall for my 2012 year, but my favorite is that Bill got a home and people to love him.
